New Book!!

I was at Harris book store yesterday and bought a new recipe book!

I saw this the other day at Kinokuniya with B, but didn't want to get it as there were lots of people at the shop.

I was alone browsing yesterday, and was very happy to see it on the shelf. I just had to have one.

Really awesome recipes inside. Can't wait to try them out!! I'll post pictures with recipes if I do try them (and succeed).



Baguettes

This post is long overdue. Done this like 2 weeks ago, but only manage to blog now.

Tried 2 versions of baguettes, baked on perforated baguette pan which I bought from amazon.com. I think the pan gave it a better shape than baking on baking tray.

The first one is a baguette recipe using a poolish, when I put them in the oven, I added some ice-cubes into a tray that was already preheating in the oven. Which had some steam in the beginning, but I think I threw in a little too much that the steam didn't last and had to wait for the cubes to melt n boil to form steam. Here's the recipe, its taken from "BREAD; A baker's book of techniques and recipes by Jeffrey Hamelman":

Baguettes with poolish
Poolish:
300g Bread flour
300g Water
1/8 tsp Instant dry yeast

Final dough:
607g Bread flour
300g Water
17g Salt
4g Instant dry yeast
600g Poolish (all of the above poolish)

Just mix the ingredients of the poolish together and let it rest at room temperature for 12 hours. then mix it in together with the rest of the ingredients in the final dough. Bulk fermentation of 2 hours with 1 folding inbetween, then divide and preshape lightly and let it rest for another 20 minutes before final shaping. After final shaping, final frementation of one to one and a half hours. Bake with steam at 237 degrees C for 24 to 26 minutes depending on weight of each dough.

Then I tried another recipe with Pate Fermentee. I just kept aside some of the dough from the above recipe in the fridge and made it the next day. Pate Fermentee cannot be kept in the fridge for more than 48 hours, best to used the next day. Or you can make the pate fermentee if you don't have old dough.

Here's the recipe, from the same book:
Pate Fermentee:
227g Bread flour
150g Water
5g Salt
1/8 tsp Instant dry yeast

Final dough:
680g Bread flour
448g Water
11g Salt
1 1/4 tsp Instant dry yeast
383g Pate Fermentee (all of the above Pate Fermentee)

Same with the Poolish, your can make the Pate Fermentee and let is rest at room temperature for 12 hours before using, or you can use any old dough you have from the previous day.

The difference in this recipe is that you mix the final dough ingredients first, after its incorporated, add in the pate fermentee in chunks. Bulk fermentation and final fermentation is the same as the poolish.

When I did this version, I used boiling water instead of ice-cubes. This achieved a continuous steam production. The result was a more light baguette and I preferred the taste of the one with the pate fermentee.

Was thinking of preparing:
  • mock sausage rolls
  • mock char siew buns
  • cheese twists
  • raisin twists

T.I.R.E.D

Seriously. I really don't know why I'm so busy. It's like I never have enough time to do the things that I want to do.

I've been back for almost a year, and I still have not met up with my friends.

There's a bunch of recipes that I need to get typed into Word documents, and it's still NOT DONE.

My time just flies by like that. *poof*

It's Friday, AGAIN!

I need to bake a cake for SIL's birthday tomorrow. Hopefully I still have the energy to do some typing after the cake is done.

I need more energy! Any suggestions? How you people have so much energy to do so much???

New Adventure

I was thinking what I should title this post, "adventure", "mission", "goal".

I decided to go with ADVENTURE.

As we all know, I just completed a short baking course, and I've been practising at home, but I still think that something is wrong somewhere. So I was at Borders yesterday, found a book about BREADS. Its everything about breads from the making to the baking; the science behind it. It's entitled, BREAD, A Baker's Book of Techniques and Recipes, by Jeffery Hamelman.

From today, I'm going to embark on an adventure; reading and making every recipe in this book. (or at least try and attempt to successfully make it, and I know it sounds corny and a copy of Julie & Julia, but I'm still gonna do it!)

Its a pretty thick book: 350 pages, 89 recipes.

I HAVE NO FREAKIN IDEA WHEN I WILL EVER COMPLETE THIS ADVENTURE :P

Let's set a deadline of end of 2011. LOL.

Wish me luck! I'm gonna need it ;o)

Bad Monday

Bad start to a new week. Everything doesn't feel right. Sneezing the whole morning, made a bad joke about a friend and feeling bad about it after.

Gosh...Sucks!

Need HELP!!

O.K.

I need to decide if I should continue using this blog or start a new one.

My concerns:
1. This blog is sorta personal blog, whereas I want to start blogging about cooking and baking.

2. I'm also thinking of starting a blog for my goats. So that means I have 2 blogs to maintain. But it's also better cos the goats one is going to be linked to the farm's website.

So, I have 2 options:
A. Continue using this blog for my cooking life and start a new one for the goats.

B. Start a new one for both my cooking life and the goats. Then this blog won't be updated so frequently, and it'll be on a more personal level.

Please help!! OH, and I also need to think of a blog title for the goat one.

iSuck

iPhone 4 is out; new functions, upgrades, just simply better than the previous iPhone.

ME?

I've been blogging since 2007 (not very frequently), and I still can't get around using the features on the dashboard. I'm going to need some time figuring out where I can get stuff done. But I finally manage to export from Wordpress to Blogger (thanks Sherwyn!).

Basically, iSuck.

Anyway, it has been some time since I touched this thing. Basically, I'll be blogging mostly about cooking and baking, and also about my goats @ Hay Dairies (Singapore).

Permanent heartache

Life is really short, trasure your loved ones before they are gone.

My godfather just passed away.

It happened so suddenly, we couldn't even see it coming. And it hit us like a bullet through our hearts. He left us with a wound that will never be healed. Aching whenever we enter his room or see his photo.

I've been away for so long, I never got to see him one last time when he was alive. I will never get the chance to fetch him to the market to buy groceries, I'll never be able to speak to him again. He never got to see me get married or even take graduation photos with me.

Why must he go? Why must he leave us so suddenly?

Life is so different without him, nothing will be the same.

We will love you and remember you always.

Friday night baking

It's Friday night, everyone else is either out with their partner or hanging out with friends.

PMS-ing

I really hate it when THE PERIOD is coming, it gets me all emo, and my sleep pattern is screwed up.

I get really weird dreams at night, that make me wake up countless times during the night, and I end up waking up really late the next day. There's also the cramps even before its here,and on the first day its just so pain that I always have to take Panadol. SUCKS!

I get all emo over nothing, and I eat like a pig.

I even feel like crying.

Can the stupid thing just COME!!!!

Well it's more like a break from uni and home for work.

Criticism

Criticism may not be agreeable, but it is necessary.

No one likes to be criticised, including myself. But it is through criticism that we know what to improve on.

I don't blame a rash first reaction to it, but it takes a big heart to accept it.

I'm still learning to accept criticism when faced with one. It takes courage and strength to accept and be thankful that someone actually cares about you, and wants you to be aware of your flaws.

The person who dares to criticise you, is the one who truely cares about you.

Week 3 and loving it!

Time seems to go by so quickly this semester. Maybe it's because I've been sleeping 10 hours daily!! So the rest of the day seems to zoom by faster. Or maybe I've been keeping myself busy with work, cooking and pilates. Just started today pilates again today, my body is going to ache like hell tomorrow.

I should really get started with assignments tomorrow, so I can finish them in time and go back during Hari Raya break to help daddy out. Also hoping my bf could come over to see me when I'm back in September.

Just feels good this semester, I think its the last one, that's why.

Love my timetable too. 3-hour days, 4 days a week. Fridays off. Decided to skip lectures on Tuesdays cos its finance and its boring. But I promise to practice at home. So that's Tuesdays and Fridays off :D

Overall, I'm happy. Much happier.
